Health Science: Introduction to Nutrition

In this course, students will explore how the body turns food into energy through nutrient digestion and metabolism. Students will analyze their own bodies’ protein, fat and carbohydrate needs, and learn how movement and exercise changes those needs. Students will engage in group projects, discussions and presentations that address societal issues such as dietary misinformation on the Internet, food insecurity/food deserts, popular diets and dietary supplements. Activities will include, for example:

  • A personal dietary analysis and reflections on dietary recommendations
  • A study of restaurants and grocery stores in NYC neighborhoods and how geography and local environment can impact diet
  • An exploration of food ingredients and their impacts on the planet (plant-based v. meat-based diets)
  • Presentations on diet trends and the future of the global food system
